Two weeks out
Your list says who is at table 4. It does not say that the gluten-free plate goes to seat 10, that seat 9 is still empty because one RSVP never came, or that the two people you kept apart have ended up facing each other. A table seating chart has to go one level deeper than the table.
Seat by seat
Every guest you drop on a chair is seat 1 to seat 10 on that table, in order round the table. The dietary column from your spreadsheet comes with them, so the seat list already says which plate goes where, and an open seat is listed as open rather than silently missing.
Whole room to one table
Seat the wedding party and close family first, then work outwards. The whole room shows which tables are full and which still have numbered, empty chairs; the close-up shows exactly who is beside whom, so the pair you need to keep apart never end up shoulder to shoulder.
